  1. Whisk together the vinegar, lemon juice, honey, salt, and pepper in a small bowl.
  2. Drizzle in the olive oil slowly, while whisking.
  3. Toss together the salad greens, blue cheese, apples, celery, and onion in a large bowl until well mixed.
  4. Drizzle dressing over salad, tossing to coat.
  5. Sprinkle extra cheese on top if desired.
  6. Serve.
